Chinese Interpreting - Mandarin or Cantonese?

There are seven main dialects in common use in Mainland China, plus many more local variations, not to mention the different ethic minorities in China, many of whom have their own languages and dialects.
For instance, someone speaking Shanghai dialect will not be understood by many Chinese interpreters, unless she or he happens to come from Shanghai or lived there before. In Fujian Province alone, several dozens of dialects are spoken. However, in the majority of business interpreting situations either Mandarin or Cantonese dialect will be used. The distinction between Mandarin for Mainland China and Mandarin for Taiwan should be considered, but is not so vital for interpreting as it is for the written form. The majority of Chinese population speaks Mandarin as their mother tongue.
